For my rosemary gin fizz, we use homemade rosemary simple syrup to put an herbal spin on the classic gin fizz cocktail. You can substitute other herbs for the rosemary. Think mint or basil!
2 ounces (4 tablespoons) gin
1/2 ounce (1 tablespoon) fresh lemon juice
1/2 ounce (1 tablespoon) rosemary simple syrup, recipe below
3 ounces (6 tablespoons) club soda
Lemon slice, optional
1 rosemary sprig, optional
1/2 cup sugar
1/2 cup water
2 sprigs fresh rosemary
Make rosemary simple syrup. Combine sugar and water in a small saucepan. Bring to a boil and cook, constantly stirring, until the sugar dissolves. Remove the pan from the heat, add the rosemary, and let steep for 1 hour. Discard the rosemary sprig. Store in an airtight jar in the fridge for up to 3 weeks.
Shake gin, lemon juice, and rosemary simple syrup in a cocktail shaker filled with ice. Strain into a glass filled with ice. Add club soda and garnish with a lemon slice and sprig of fresh rosemary.
