Quick Easy Avocado Pasta

You can make our avocado pasta recipe in 15 minutes. You don’t need any special equipment for this creamy avocado pasta sauce, just a bowl and fork. This recipe is easy, quick, and dairy-free!

Our avocado pasta sauce is surprisingly simple to make. It’s super creamy, and you don’t use butter or cream to make it. This is one of my favorite avocado recipes.

We love this recipe so much! We’ve even tried it with sweet potato noodles.

Quick and Easy Avocado Pasta

Key Ingredients

  • Pasta: I love spaghetti, but use your favorite pasta for this recipe. I’ve also made it using chickpea and lentil pasta, which added some extra protein.
  • Avocado: You can make this easy avocado pasta sauce with 1 large avocado. Look for one that’s ripe and slightly gives when you press it.
  • Tomato: You can see from my photos that I add a handful of chopped tomatoes to this pasta. They are pretty and add some extra texture.
  • Green onion and garlic: I don’t go overboard with the onion and garlic. That’s why I stick with mild green onions and only a 1/4 teaspoon of grated garlic (any more, and it will be too strong).
  • Lemon juice: Loosens our sauce and adds fresh flavor. Lime works nicely, too.

How to Make Avocado Pasta

This recipe is quick. Cook your pasta in salted water and follow the package directions. While it cooks, you’ll prep the sauce. Use a fork to mash avocado in a bowl until really creamy. If you still have a few larger pieces, it is okay. We are going to thin this out with pasta water in a minute.

Stir in grated garlic, lemon juice, salt, and pepper. Some of our readers were skeptical, calling this guacamole pasta, but everyone returned to tell us they LOVED it. Then, to turn this into a creamy sauce, add a splash of hot pasta water to thin it out. This starchy water thins our sauce nicely and helps it stick to the pasta.

Toss in your cooked pasta, green onion, and tomatoes. Give everything a really good toss in the avocado sauce, adding a little more pasta water if you think it needs it (it usually does). And that’s it! Your very own bowl of creamy avocado pasta.

What to Serve with Avocado Pasta

I love avocado pasta with some baked tofu or poached shrimp added to the top. You can also serve this easy pasta with salad on the side. Try this Greek salad, Caesar salad, or use one of our favorite homemade salad dressings. I especially love homemade ranch, honey mustard dressing, and this tahini dressing (dairy-free).

Avocado pasta is a quick, fresh, and super easy meal! You can make the flavorful, dairy-free avocado sauce while your pasta cooks. For the best texture, grate your garlic with a microplane. If you don’t have one, mince the garlic finely.

You Will Need

8 ounces dry pasta

1 large ripe avocado

1 medium tomato, diced

1 green onion, finely sliced

1/4 teaspoon finely grated garlic

Juice from a quarter of a lemon

Salt and fresh ground pepper, to taste

Directions

    1Bring a pot of salted water to a boil. Cook your pasta following the package instructions. Reserve 1/2 cup of hot pasta water before draining the pasta.

    2While the pasta cooks, mash the avocado in a large bowl. Stir in garlic, lemon juice, salt, and pepper.

    3Add 1/4 cup of the reserved pasta water to the avocado mixture and stir.

    4Add the cooked pasta, tomatoes, and green onion to the bowl. Toss everything together until the sauce evenly coats the pasta. Add a little more pasta water to thin out the sauce if needed.

    I used this recipe to use some avocados that were going too ripe. and tomatoes from the garden, I NEVER would have considered PASTA SAUCE. But I googled recipes using Avocados and some other ingredients I had on hand I this came up. SO GLAD IT DID! Added some left over bacon from yesterday’s breakfast…finely chopped. I will add your recipe to my list. This was delicious and a nice change from the normal tomato or cream sauce recipes.

    Very easy. We’ve made it twice, both times in 30 minutes. By the time you drain the pasta the avocado is squished, combined with lemon, and seasoned. It’s delicious. I know we’ll make it often.

    This could not be eaiser ! So delicious, thanks ! Love all the add in suggestions – I plan to add feta and some chopped olives to my leftovers. Oh and I used penne – came out great! Thanks!!!
